Late June is close to the peak time. If you stay in Zion Lodge, you can drive into the park, otherwise you have to park around info center and take the shuttle to get around. Most people make daily trip into Zion, so if you stay in Zion Lodge, you will have some better time in early morning, late afternoon and early evening with fewer people around.
Zion Lodge has a fairly good (~$20 dinner) restaurant for breakfast and dinner (you have to call in to reserve seats for dinner, no walk-in). You probably want to buy some sandwiches the evening before or in the morning for lunch. You will not have time to drive around to get lunch in those two parks.
You will have lots of driving. The fastest way to get to these two parks from Arches is I70 and I15 (longer trip, but absolutely no traffic), and that is a 6-hour one way drive. Xh has a good point. Fly into SLC or Las Vegas and pick up a rental car will save your time and driving.
Wear hiking shoes/boots, at least walking shoes (off-court). Flat-sole sneaker is no good on hiking trail.
Take a flash light if you want to walk around a little bit in the evening (best place for stargazing).
Pick up some native Indian music CDs. When you are driving in the wilderness with very few sign of people and listening to their music, you will get the sense.
